At Home With Mrs M for Meal Planning Monday
and Darling Downs Diaries for Good Morning Mondays.
With a lot of illness in the house recently, I have spent time browsing the internet for recipes I could make using what was already on hand in the pantry, fridge and freezer. I did not want to take poor sick little ones traipsing around the supermarket! This bout of illness has also reminded me of just how important it is to me to have good stores in place so that we can eat from home for an extended period if necessary.
So my menu plan this week consists of some old favourites, plus internet recipes that I tried out during our couple of weeks of illness and that everyone liked. It is always a bonus when EVERYONE likes the same meal!
Monday
Roast lamb, roast potatoes and carrot, steamed broccoli, gravy and mint jelly
Tuesday
Little Bacon and Egg Pies - these are super easy and yummy - with green salad and potato wedges
Jelly for the kids
Wednesday
Lemon and Honey Chicken Stir Fry
Apple crumble
Thursday
Spaghetti bolognaise
Lemon delicious pudding
Friday
Moosewood's Red Lentil Soup with Parmesan toast
Applesauce cake (but using pear butter, as that is what is in the store cupboard)
Saturday
Grilled salmon salad, potato wedges, steamed green beans, honey carrots
Jam roly-poly
Sunday
Roast chicken, roasted root veggies, corn on the cob, peas
Sticky date puddings
Blueberry and raspberry muffins
Choc chip cookies
Lemon slice
Chewy chocolate coconut slice
Jam drop biscuits
Hedgehog slice
Monkey face biscuits
I will also be making a batch of pizza bases to add to the freezer as I used my last four last week.

ReplyDeleteRoast lamb is hubby's absolute favourite. And I made my own mint jelly for the first time earlier this year, so he is extra happy.

ReplyDeleteI have made the lentil soup before - it is yummy. I have to do that much baking with three hungry boys and hubby. Otherwise I would be buying it instead - this is much more cost effective! Thanks for visiting.
DeleteOh my! I need to find some cooking inspiration! I feel like we have the same meals over and over. My husband is a meat manager in a grocery store and he says women shoppers say the same thing. I am not good at planning meals and shopping for what I need.
ReplyDeleteI tend to go through phases - sometimes really keen and inspired, and sometimes it is just all too hard! Depends I think on whether the meals are appreciated or not - I have a four year old who can sometimes be very vocal in his decision of liking or not liking!

ReplyDeleteMy boys take the egg pies to school sometimes on 'warm-up' days. They are great to freeze too.
DeleteLove your menu list Jayne, some good recipes there. I have been making good old fashioned recipes of late because when I do there are empty plates. Getting back to basics seems to be the best way to go, and I have the ingredients in my pantry :)
ReplyDeleteHahaha, I have one of those old sunbeam mix masters and a new flash one. Guess which one I use the most? Yep you guessed it, the old one. I asked my dad to service it recently as it was overheating, so he has done that and now its works like new.
I hope your family are feeling a lot better now. We had a bout of the flu as well, but only two of us went down, my son and me...

The old ones are always better. Newer appliances are just made to last a short time and then throw away - I don't like that thinking!
DeleteEveryone here seems to be happy eating the old favourites as well. Maybe it is just me that feels we need more variety.

DeleteI'll have to try the lemon and honey chicken stir fry. Last week I was super busy and out of the house in the afternoons more than normal. when that happens my eldest two girls watch the little ones for me. But I dread coming home exhausted having to muster up the energy to cook an evening meal. However, last week I was blessed and on a number of occasions came home to find that my eldest daughter (16) had cooked meals for us. Cooking isn't really her thing but she did a great job. One evening she made honey soy beef stir fry. It was super yummy. She also made an apple crumble and custard for desert. I was so impressed I asked her if she would like to cook diner and desert one day a week. This week she plans to cook lasagne, garlic bread and garlic salad with apple struedel for desert.
ReplyDeleteThat is fantastic! Cooking is definitely a skill children should learn, but it is becoming less common that they leave home knowing how to make even a basic meal. And your daughter is making more ambitious meals. That really is a blessing for you. I always find it easier to cook when I haven't been out of the house all day. I will have to search out a recipe for honey soy beef - beef is something we have lots of!
DeleteShe can cook a handful of meals but often lack confidence in her ability since her younger sister is very competent in the kitchen and an excellent baker. But I still encourage her to cook when she can so she has skills in the future. The honey soy recipe was really simple, a mix of equal quantities of soy and oyster sauce and honey. We also love using beef mince to make a quick and simple stir fry (of sorts) just brown off the mince, remove, sauté vegies, add soy and oyster sauce plus some beef/chicken stock, return mince and thicken sauce with a small amount of cornflour mixed with water. It's quick and simple especially if you boil the kettle and soak some vermincelli noodles to add at the end.
ReplyDeleteIt is always hard not to compare yourself when someone else in the family does something well. But it certainly sounds as though she is doing an excellent job. I will try out those recipes - thanks!
