Meal Plan Monday

Joining today with I'm An Organising Junkie for Menu Plan Monday,

At Home With Mrs M for Meal Planning Monday

and Darling Downs Diaries for Good Morning Mondays.

I have been SO busy and preoccupied with the garden at the moment that everything else is going by the wayside a bit! I am so excited with the progress though - I will share it in my next post.

This week, I am using some recipes from Grow, Harvest, Cook by Meredith Kirton.

This is a great Australian book. As the title suggests, there are growing tips, when to harvest and what to cook with your produce. It is arranged alphabetically by produce. It is by no means an in depth book, but it is great to dip into for some quick information and some great recipes.

I make my banana bread from this book. I change it around to add whatever nuts and spices I feel like (or need to use up). Absolutely delicious for breakfast - toasted under the griller, then topped with yoghurt and honey.

Monday
Tacos

Tuesday
Herbed chicken pieces, potato wedges, stir fry veggies
Chocolate Velvet Ice Cream (I make this without an ice cream machine. Just pour into a Tupperware and remember to give it a good beating every hour or so. This will stop ice crystals forming throughout the ice cream).

Wednesday
Beef Stew (from The Pioneer Woman)
Jelly

Thursday
Pumpkin soup with garlic bread
Golden syrup dumplings

Friday
Dill and parmesan crusted fish fingers, green salad
Vanilla panna cotta with berries

Saturday
Lasagne, chopped green salad
Cherry slice

Sunday
Lamb roast, roast veggies, steamed greens

M&M cookies
Fruitcake
Anzac biscuits
Hedgehog slice
Lemon curd and blueberry muffins
Scones

Happy cooking!

  1. Is lemon delicious pie the same as impossible pie? If so could you point me to a good recipe. I was thinking about making this the other day. We don't really make puddings regularly but it's a nice change in the cooler season.

  4. That is a great menu plan.

I always like to see what other people are having for their meals. It gives me fresh ideas to add to my list. You have reminded me that I was going to make pumpkin soup this week with one of my homegrown pumpkins. I had completely forgotten all about it ~smiles~
